PIZZA DOUGH
- 2 teaspoons dry active yeast
- 4 ½ cups all-purpose flour, plus extra for dusting
- 2 teaspoons kosher salt
- 2 tablespoons olive oil
PIZZA SAUCE
- 6 ounces tomato paste
- 15 ounces tomato sauce
- 1- 2 tablespoons dried oregano to taste
- 2 tablespoons Italian seasoning
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ Tablespoon salt
- ¼ teaspoon freshly ground black pepper
- 1 teaspoon sugar

NOTE: I make this dough at least one day before making pizza and long rise in the fridge helps for baking.
STEP 1
- Put 1 ¾ cups lukewarm water in a mixing bowl (use a stand mixer or food processor if you prefer). Sprinkle yeast over water and let it dissolve for about 2 minutes.
STEP 2
- Add flour, salt, & olive oil, and mix well until the flour is incorporated and the dough forms, about 5 minutes. It may look a little rough or pockmarked.
STEP 3
- Lightly dust a work surface with flour. Turn dough out onto the surface and knead lightly until it looks smooth, 3 to 4 minutes. Cut dough into 4 equal pieces, about 8 ounces each or three at approximately 10 oz.
STEP 4
- To use dough, form each piece into a smooth, firm ball, and place on a flour-dusted or parchment-lined baking sheet. Flour lightly, cover loosely with plastic wrap or parchment and top with a kitchen towel. Leave to rise in a warm spot until doubled in size, about 30 minutes.
- Each dough ball will make a 10-inch diameter pizza.
STEP 5
- If you'd like to refrigerate the dough, wrap dough pieces individually in resealable zipper bags and refrigerate overnight; you can also freeze it for future use.
SAUCE:
STEP 1
- Whisk tomato paste and sauce together in a medium-sized bowl until smooth.
STEP 2
- Add the rest of the ingredients – oregano, Italian seasoning, garlic powder, onion powder, salt, pepper & sugar – and whisk until evenly distributed throughout the sauce.
STEP 3
- Taste & adjust seasonings to your preference.
STEP 4
- Spread onto your dough and top with lots of cheese & the toppings of your choice
HOW TO MAKE YOUR PIZZA PERFECTLY:
- Preheat oven to 475 degrees F
- Let your oven preheat for 30 minutes at 475 - this is past the preheat function on your oven (Even if your oven preheats in 15 minutes, let it sit for an additional 15 minutes)
- Place a piece of parchment on a 10” pizza pan and place your pizza dough on top of the parchment
- Decorate your pizza in any way that makes you happy
- Place the pizza pan into the oven once it’s preheated
- I bake one pizza for approximately 15 minutes; that’s when the crust is nice & golden in my oven
